Here is a recipe for some basic carb free and low fat meatballs.  Don’t let the description fool you, these are actually quite delicious and are great for going on pasta or in a bun for a great meatball sandwich.  It’s a quick meal that has become a family favorite.

  1. Combine meat and spices in a bowl. Hand mix until the spices are evenly distributed through the meat.
  2. Measure out 1.5 oz of meat mixture and roll between the palms of your hands to form into balls.
  3. Add olive oil to a large fry or saute pan. Heat over medium heat. Add meatballs so they all are sitting on the bottom. Cook until the bottom side browns.
  4. Lower heat to medium low if necessary (oil should not burn).
  5. Roll each meatball to an uncooked side and brown. Repeat until they are cooked all the way around.
  6. To finish you have two options. 1. Continue cooking and rolling until they are cooked all the way through. Once cooked they can be added pasta, sandwiches or just eaten all by themselves. - or - 2. Add pasta sauce and stir gently to mix the meatballs in without breaking them. Brink to a boil and stir occasionally until they are cooked all the way through.
  7. Scoop onto pasta, or into a bun and sprinkle with mozzarella (or your favorite) cheese. Using standard hoagie rolls, 4 meatballs will fit in each for a total of 6 sandwiches.
  8. Enjoy!
